Chorizo (cured sausage) is the mix of ground meat, exclusively from the finest cuts of pork, seasoned with sea salt, pepper, garlic and sugar, mixed and made into sausages in tripe, which has undergone a maturing/drying process that is characterised by its red colour and the aroma and flavour.

The cut is characterised by coarsely ground mince and a shiny colour from the fat infiltration in the extensively reared pork muscles.
