This dry-cured, pork shoulder loin meat is a Cinco Jotas delicacy traditionally made in Jabugo. It is a sausage that only contains pork shoulder loin (the cut from the top loin, next to the shoulder) from 100% Iberian pigs fed with acorns during the fattening period. The pork shoulder cut is a very high quality noble meat with high muscle infiltration similar to Cinco Jotas 100% Acorn-fed Iberian Ham.
